“Swedish talent Rasmus Olander cooks Nordic Cuisine with local ingredients.
The potato with buttermilk foam and dried green plums is an exciting dish with extreme sour, salty and sweet flavors mixed together.
The perfectly cooked scallop with cherry blossom soy sauce is more than successful and daring. The Dutch shrimps with oyster leaf and Belper knolle cheese show a perfect balance of elegance and taste intensity.
The dry-aged beef loin with the sauce of oxtail, marrow, and Swedish lingonberries is second to none. An original ending with lemon thyme ice cream with carrots.
This vision of Nordic cuisine is promising and immediately good, for two chef’s hats!”
